Mini Cherry Pies
These individual serving pies are so much fun. They take a bit more time to make but they are worth it. They are especially great if you are having a dessert spread or an appetizers meal. Of course the lattice topping takes some time not only to put together but also to master. If you don’t quite have the time to spend on these you can always consider making an open-top pie like pumpkin or topping them with streusel.
A simple way to make these is to use canned pie filling. But if you would like to make them from scratch here is a wonderfully simple recipe that tastes great.
4 cups fresh or frozen tart cherries
1 to 1 1/2 cups granulated sugar
4 tablespoons cornstarch
1/8 tablespoon almond extract (optional)
Cook the cherries in a covered saucepan over medium heat until they lose a considerable amount of juice. This usually takes a few minutes. While they are cooking mix the sugar and cornstarch together in a bow. Once the cherries are finished remove them from the heat and add the sugar mixture and mix well. Add the almond extract if desired. The almond flavor is a great compliment to cherries. It helps to bring out all their flavors. You can always substitute vanilla for the almond if you don’t have almond extract but I find that skipping the extract altogether is better.
Return the cherries to the stove and cook over low heat until the mixture thickens. Make sure to stir it frequently. Once thick, remove from heat and let cool.
