Amazing Pumpkin Bars with Maple Glaze

I can’t remember when I first had these pumpkin bars. But I can say that they are really tasty! I do remember growing up with a similar recipe, cherry bars made with cake mix. I could have eaten them by the pan full. I’ll have to dig that recipe up some day soon. But until then, enjoy these little pumpkin bars.

CRUST
1 pkg.  Yellow cake mix- any will work
1/2 cup melted butter
1 egg-beaten

FILLING
3 eggs
1 (16 oz.) can pumpkin
1 (14 oz.)  sweetened condensed milk
1 tsp. almond extract
1/2 tsp. ground cinnamon
1/2 tsp. salt

TOPPING

reserved cake mix
1/2 c. sugar
1/4 c. butter softened

1/2 cup pecans, chopped

Preheat oven to 350 degrees.

Remove 1 cup of the cake mix and set it aside for the topping. In a large bowl add  the remaining cake mix, one egg (beaten) and melted butter, mix until  it is well combined and crumbly. Press into the bottom of a greased 13×9 inch baking pan.

In a medium bowl beat the remaining eggs. Add the pumpkin, condensed milk, almond extract, cinna mon, and salt. Mix well and pour over prepared crust.

In a small bowl add reserved cake mix, 1/2 c. sugar, pecans  and softened butter. Mix until crumbly and sprinkle over the pumpkin mixture.
Bake 50-60 minutes or until set.
