Mother’s Day Banana Cupcakes

Mother’s Day is just around the corner and I have been reminiscing a bit about all of the wonderful family lunches we have had to celebrate the day. We always used Mother’s Day as another good reason to get the whole family together. This year will be the first year without my grandma. Her presence will be sorely missed. So will her wonderful desserts.

My Grandma was always the baker in our family and for good reason. Her cakes and cookies were fantastic. She just had the gift of baking. Every one in the family had their favorite and when it was your birthday you were able to put in a request for her to make whatever you would choose. On Mother’s Day and other Holidays she would make what ever sounded good.

Well, my favorite was always her banana cupcakes. They are so moist and delicious it is hard to put them down. So in honor of my Grandma I am passing on the recipe. I hope you enjoy it.

For my moms birthday last year I made her flowerpot cupcakes. I think this would be a wonderful idea for a Mother’s Day gift as well. If you would like to read how to make them, here is the link.

Delicious Banana Cupcakes

2 1/2 cups cake flour
1 2/3 cup sugar
1 1/4 tsp baking powder
1 1/4 tsp soda
1/2 tsp salt
2/3 cup shortening
2/3 cup buttermilk-divided
1 1/4 cup mashed bananas (about 3)
2 eggs

Sift together flour, sugar, baking powder, soda and salt. Add in shortening, 1/3 cup buttermilk and bananas. Mix well for 2 minutes.

Add in eggs and 1/3 cup buttermilk and mix for another 2 minutes.

Grease and flour, or line muffin tins. (makes 2 dozen) Fill muffin tins 3/4 full.

Start baking in a 375º oven for 10-15 minutes. Lower heat to 350º and bake for 25-30 minutes more. Check after they have been in the oven for a total of 40 minutes.

Frosting:
3 cups powdered sugar
1/2 cup butter-softened
3 tbsp cream
1/4 tsp lemon extract

Mix all ingredients together with beaters until well combined and fluffy. Spread over cooled cupcakes and top with chopped walnuts.

These cupcakes freeze really well. So feel free to make them in advance. They will still be wonderful.
